Ingredients

Directions

  1. Preheat the oven to 400°F.
  2. Heat olive oil in a non-stick frying pan over medium heat.
  3. Add half of the spinach to the pan and sauté until wilted, about 2 minutes.
  4. Add minced garlic, a pinch of red pepper flakes, black pepper, and remaining spinach. Sauté until all is wilted, about another 2 minutes.
  5. Remove the pan from heat and set aside.
  6. Place the flatbreads on a baking sheet or pizza pan. Evenly spread the spinach mixture over them.
  7. Sprinkle mozzarella and parmesan cheese evenly over the flatbreads.
  8. Add goat cheese evenly over each flatbread.
  9. Bake in the oven for 5 minutes. Then, turn on the broiler and broil until the cheese is melted and slightly browned, watching carefully to prevent burning.
