Directions
- Preheat the oven to 375°F.
- Grease a high-rimmed baking sheet with coconut oil, leaving a few clumps on the sheet.
- In a small bowl, combine water, flaxseed, and chia seeds. Stir and let sit to thicken.
- In a large bowl, mix oats, almond flour, wheat flour, salt, spices, baking powder, and sugar. Fold in the wet ingredients, including the seed mixture. Adjust the consistency with almond milk if necessary.
- Slice figs, removing stems, and toss with maple syrup and grapefruit juice. Arrange on top of the batter and pour any remaining liquid over.
- Sprinkle walnuts and additional oats on top.
