  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper or foil.
  2. In a small bowl, combine olive oil and minced garlic. Stir well to infuse the garlic flavor, then strain the mixture to remove garlic pieces. Stir in marjoram.
  3. Slice the cabbage vertically into large rounds about 3/4" to 1" thick and place on the prepared baking sheet. Brush both sides with the olive oil mixture and season with salt and pepper.
  4. Roast cabbage for 15 minutes, then carefully flip and roast for another 15 minutes. For less charred edges, cover with foil during the last 10 minutes.
