- Preheat the oven to 425°F. Line a baking sheet with parchment paper or foil.
- In a small bowl, combine olive oil and minced garlic. Stir well to infuse the garlic flavor, then strain the mixture to remove garlic pieces. Stir in marjoram.
- Slice the cabbage vertically into large rounds about 3/4" to 1" thick and place on the prepared baking sheet. Brush both sides with the olive oil mixture and season with salt and pepper.
- Roast cabbage for 15 minutes, then carefully flip and roast for another 15 minutes. For less charred edges, cover with foil during the last 10 minutes.
