- Preheat the oven to 450°F.
- In a small bowl, combine minced garlic for seasoned oil, olive oil, half of the oregano, half of the salt, and one-third of the pepper.
- Halve the remaining garlic cloves and toss with Brussels sprouts and three-quarters of the seasoned oil in a large roasting pan. Roast, stirring once, for 15 minutes.
- Add white wine to the remaining oil mixture.
- Remove the pan from the oven, stir the vegetables, and place the salmon on top. Drizzle with the wine mixture and sprinkle with the remaining oregano, salt, and pepper.
- Bake until the salmon is just cooked through, 5 to 10 minutes more. Serve with lemon wedges.
