  1. Bring the water to a boil in a 3- to 4-quart saucepan. Add the garlic, salt, bay leaf, and thyme; cover and simmer gently for 15 minutes, then taste and adjust salt. Remove and discard the bay leaf.
  2. Stir in the pasta, cover, and simmer until just al dente, 5 to 10 minutes, stirring occasionally to prevent sticking. Add the peas and simmer 5 minutes more.
  3. Meanwhile, whisk the eggs with the olive oil in a medium bowl. Slowly whisk in 2 ladlefuls of hot soup to temper the eggs.
  4. Turn off the heat. Slowly stir the tempered egg mixture into the soup until lightly thickened. Season with pepper and stir in the parsley. Ladle into bowls, top each with Parmesan, and serve with the toasted bread on the side.
