  1. Roughly chop the onion. Peel the cucumber. Halve the cucumber lengthways and using a spoon, remove the seeds then chop. Remove the seeds from the capsicum and chop roughly. Chop the tomatoes. Crush garlic with the blade of a knife. Remove crusts from bread. Stevia = equivalent of 20g sugar. Chop the coriander. Chop the chilli. Place roughly chopped onion, cucumber, tomato, chilli, garlic, capsicum and bread in blender. Add tomato juice, vinegar, oil, stevia and salt, and blend thoroughly. Chill in the fridge. Serve chilled, garnished with croutons and chopped coriander. --- important: 2.5 servings per food processor maximum
