Directions
- Chop all the vegetables into cubes (the tomatoes cut them in 4 pieces making a cross) as well as the feta cheese
- Spread the olive oil into a frying pan and put the cubes.
- Cover them with a lid (or a dish upside down) so they will get fried without lose their moisture.
- Fry them for 10' in high heat (stir them every 5') and then for 5' in low heat.
- While waiting for them to fry put the eggs in a bowl and mixed them.
- Remove the lid / dish and put the heat back to high
- Pour the eggs and wait for 2'.
- Put the tomatoes and feta cheese and wait for another minute.
- Flip the omelette. Wait for another 2'
- Flip again 2 times.
- Ready to serve.
- PS: You can just ignore the last 5 steps and instead of waiting for the eggs to become solid you can just scramble them adding the feta cheese and the tomatoes. It's quicker.
