Ingredients

Directions

  1. Chop all the vegetables into cubes (the tomatoes cut them in 4 pieces making a cross) as well as the feta cheese
  2. Spread the olive oil into a frying pan and put the cubes.
  3. Cover them with a lid (or a dish upside down) so they will get fried without lose their moisture.
  4. Fry them for 10' in high heat (stir them every 5') and then for 5' in low heat.
  5. While waiting for them to fry put the eggs in a bowl and mixed them.
  6. Remove the lid / dish and put the heat back to high
  7. Pour the eggs and wait for 2'.
  8. Put the tomatoes and feta cheese and wait for another minute.
  9. Flip the omelette. Wait for another 2'
  10. Flip again 2 times.
  11. Ready to serve.
  12. PS: You can just ignore the last 5 steps and instead of waiting for the eggs to become solid you can just scramble them adding the feta cheese and the tomatoes. It's quicker.
