Green Kale Salad

Ingredients

• Kale

  Raw

  4 cup, chopped or 268g

• Olive oil

  Salad or cooking

  2 tsp or 9g

• Garlic

  Raw

• Pepper

  Spices, black

  1 dash or 0.1g

• Celery

  Raw

  2 stalks, large (11 inches long) or 128g

• Green bell pepper

  Sweet, green, raw

  1 large (2-1/4 per lb, approx 3-3/4" long, or 164g

• Zucchini

  Summer squash, includes skin, raw

  ½ medium or 98g

• Cucumber

  With peel, raw

  ½ cucumber or 151g

• Broccoli

  Raw

  1 cup chopped or 91g

• Peas

  Green, frozen, unprepared

  1 cup or 134g

• Alfalfa sprouts

  Sprouted seeds, raw

  1 cup or 33g

Directions

1. If not already thawed, microwave the peas until just defrosted and set aside. Chop and prep other vegetables.
2. Add kale, olive oil, garlic, salt, and black pepper to a large bowl. Mix well so that kale is fully coated.
3. Add remaining ingredients to the bowl and mix. Serve immediately.
