  1. Sautee chopped onion in 1 Tbsp olive oil. Add cumin and toast. Add spinach, lemon juice, water, and soup mix and cook until wilted. Taste. Make 4 wells. Add eggs to wells and sprinkle feta all over. Cook, covered, until desired doneness. Make a paste of remaining oil and zaatar and spread over the top
