In a griddle pan, on a medium heat lightly fry the halloumi for 3-4 minutes In a pan of simmering water, create a vortex by swilling a spoon around, then drop the egg in the center then poach for 3-4 minutes depending on how runny you like your yolk Whilst the egg is poaching, half the wholemeal roll and toast Mash half the avocado onto the bottom slice, grilled halloumi, then layer the poached egg, and sprinkle some fresh cress and assemble the top slice Pinch the egg to allow the yolk to drizzle out, Sprinkle a little salt and pepper to taste Enjoy!
