  1. Melt butter. Combine melted butter, garlic and lime juice in blender. Puree until emulsified. Season to taste with salt and pepper. Set aside.
  2. Prepare grill for cooking over medium-hot charcoal (moderate heat for gas).
  3. Season salmon all over with salt and pepper, then grill, flesh sides down, on lightly oiled grill rack (covered only if using gas grill), about 4 minutes. Turn fillets over and grill (covered only if using gas grill) until just cooked through to 145°F, 4 to 6 minutes more.
  4. Serve salmon fillets topped with lemon zest and lime butter sauce.
