Ingredients

  1. Preheat oven to 400 degrees.
  2. In a large skillet over medium heat combine 2 tablespoons olive oil, carrots, and bell peppers. Saute for 2-3 minutes.
  3. Add onion and garlic and continue cooking for 4-5 minutes.
  4. Push vegetables to the side of the skillet and add ground turkey, 1 teaspoon salt and 1/2 teaspoon pepper.
  5. Cook turkey for 8-10 minutes, or until completely cooked through.
  6. Use a meat tenderizer to crumble turkey completely.
  7. Add herbs, peas, tomato paste, and broth. Stir to combine, cover, and simmer for 5-10 minutes.
  8. Bring a large pot of water to a boil. Add cauliflower and boil for 10-12 minutes, or until cauliflower becomes tender.
  9. Drain water and dry cauliflower completely.
  10. Add cauliflower, almond milk, butter, 1/2 teaspoon salt, 1/4 teaspoon pepper, 1 clove garlic, and egg yolk into the bowl of a food processor.
  11. Process for 2-3 minutes, or until cauliflower is completely smooth.
  12. Spray a 9x9 inch square baking dish with non-stick cooking spray and layer the ground turkey/vegetables. Spread the mashed cauliflower on top of the ground turkey.
  13. Bake in preheated oven, uncovered, for 25-30 minutes. Broil for 5 minutes on Hi.
  14. Serve immediately and enjoy!
