  1. Cut haddock into four pieces and place in deep frying pan. Pour over milk and milk and bring to boil. Reduce heat, cover, and simmer for 4-5 minutes. Lift fish from pan and keep warm, keep poaching liquid.
  2. Melt butter in saucepan and stir in flour until smooth. Cook for 1 minute, stir in poaching liquid until evenly combined. Stir until sauce thickens. Stir in cheddar until melted, season and remove from heat.
  3. Put spinach in saucepan, cover, cook on low heat for 1 minute until wilted. Add nutmeg, transfer to greased, shallow, ovenproof dish. Place haddock on spinach and pour over cheese sauce.
  4. Top with grated parmesan cheese and chopped parsley.
