- Chop the cauliflower. Bring the chicken broth to a boil over medium-high heat and add the cauliflower. Cook until the cauliflower is soft, about 15 minutes.
- Melt the butter in a large skillet over medium heat. Add the minced garlic, chopped onion, cherry tomatoes, and chopped carrots. Sauté for 4-5 minutes until soft and fragrant.
- Cook the fettuccine according to package directions, reserving some starchy pasta water. In a separate pan, cook the chopped chicken breast in oil over medium-high heat until cooked through, about 7-12 minutes.
