Directions
- Bring a large pot of lightly salted water to a boil.
- In a large nonstick skillet over medium-high heat, cook the turkey sausage, breaking up the meat with a wooden spoon, until cooked through, about 3 to 5 minutes. Remove to a plate.
- Heat the olive oil in the same skillet. Add the peppers and onion, cooking and stirring frequently until the vegetables are lightly colored and crisp-tender, about 5 minutes.
- Add the red wine and minced garlic. Cook until most of the liquid evaporates, about 1 minute.
