  1. Preheat oven at 220C/200C fan/gas 7. Cover potato in olive oil then bake on baking tray for 25 minutes. Turn oven down to 190C/170C fan/gas 5. Bake for further 1 hr-1 hr 15 minutes until skin is crisp and golden. To serve, slice a cross in the centre, squeeze the base to ‘pop’ the top, mix together the tuna and mayo. Fill potato with tuna mayo.
