Directions

  1. Sift flour into bowl. Add butter and cut into small pieces. Rub butter into flour with fingers until mixture resembles breadcrumbs. Add mashed potato and mix in well with fingers. Or put all the ingredients into a food processor and blitz until a soft dough is formed.
  2. Flour board and place ball of dough in centre. Divide into 4 pieces and flatten each round with a rolling pin. Mark into 4 triangles.
  3. Cook each round on a hot griddle until nicely browned on both sides. Keep warm in a clean tea towel and serve with bacon and eggs.
  4. Can be stored and warmed or fried to reheat.
