Directions
- Soak the chia seeds in water for about 15 minutes until they become gelatinous.
- Preheat the oven to 350°F.
- Combine the soaked chia seeds with coconut, coconut oil, powdered sugar, and vanilla extract until well mixed. Add cashews and stir until evenly distributed.
- Line a 9"x9" baking pan with parchment paper.
- Spread the chia coconut mixture onto the parchment paper, flattening it to about 3/4" thick.
