  1. Whisk the eggs in a medium bowl until smoothly combined.
  2. In a separate bowl, whisk together the almond flour, monkfruit sweetener, baking soda, and cream of tartar (add a small pinch of salt if desired).
  3. Whisk the vanilla, melted coconut oil, and stevia powder into the eggs until evenly combined.
  4. Add the dry mixture to the wet ingredients and stir just until no dry spots remain. For best texture, let the batter rest for 5–10 minutes.
  5. Heat a nonstick skillet over low heat and lightly grease with a little coconut oil.
  6. Spoon small rounds of batter onto the skillet (about 2–3 tablespoons each). Cook over low heat until edges set and the tops are mostly dry, 3–5 minutes. Flip and cook until the second side is golden, about 1 minute.
