Directions

  1. Slice the onion and bell pepper.
  2. In a bowl, gently beat the eggs with half of the olive oil.
  3. Heat a nonstick skillet over medium heat. Cook the egg mixture until set, splitting and repeating if making more than one serving. Set aside.
  4. Heat the remaining olive oil in the skillet and sauté the vegetables until softened. Set aside.
  5. Season the beef with salt and pepper, then sauté over medium-high heat until cooked through. Add the vegetables to the meat.
  6. Fill the omelets by layering provolone cheese with the meat and vegetables.
  7. Fold the omelets over and place back in the skillet on medium heat. Cover to melt the cheese.
