Ingredients
Beef, chuck for stew, separable lean and fat, select, raw 48 oz or 1.36kg
Directions
- Season the beef with salt. Heat a Dutch oven or soup pot over medium-high heat and add half of the olive oil. Once hot, brown the beef in two batches, then remove and set aside.
- In the same pot, add the chopped onion and celery with additional oil if needed. Sauté for 5 minutes until softened.
- Add the canned tomatoes with juice, broth, water, bay leaves, and the browned beef. Bring to a boil, then reduce heat, cover, and simmer for 1.5 to 2 hours until the beef is tender.
- Stir in rice, lemon juice, pressed garlic cloves, coriander, and paprika. Cover and simmer for 20 minutes until the rice is tender.
- Remove from heat and stir in fresh chopped parsley and dill. Cover and let sit off the heat for another 10 minutes before serving.
- Season with salt and pepper to taste and serve.
