Ingredients

Directions
- Melt the butter in a Dutch oven or large saucepan over medium heat.
- Add the onion, salt, red pepper flakes, and black pepper. Cook, stirring often, until the onion is translucent and very soft, about 5 to 7 minutes.
- Add the celery, carrot, and garlic, and cook, stirring occasionally, for 5 more minutes.
- Stir in the potatoes and cook for 2 minutes.
- Add the chicken broth, lemon zest, and bay leaves. Bring to a simmer, then reduce the heat to medium-low and simmer until the potatoes are fork-tender, about 20 minutes.
