  1. 1. Preheat the oven to 350°F. Coat a 9-by-5-inch loaf pan with the cooking spray. 2. In a large bowl, combine the beef, mushrooms, onions, garlic, lentils, cilantro, egg, panko, salt, and black pepper. Mix until thoroughly combined. 3. Place the meat mixture into the loaf pan, making sure the top is even. Pour the tomato sauce over the top of the meatloaf. 4. Bake until a thermometer reads 155°F when inserted into the center of the meatloaf, about 1 hour to 1 hour, 10 minutes. 5. Let cool and slice into 8 equal portions.
