- Preheat oven to 450°.
- Pierce the potato on several sides with a fork and place on a foil-lined or parchment paper lined baking sheet or on the center of a wire rack.
- Bake potato for twenty-five minutes.
- Remove potato and brush with melted butter, sprinkle with salt, and place back in the oven for an additional twenty minutes.
- During the “second round” of baking, brown the ground turkey on a non-stick skillet over medium heat until brown all over.
- When done, remove the potato from the oven, slice the top open lengthwise with a paring knife, give it a good squeeze to open it up, and fluff the insides with a fork.
- Top with ground turkey, diced tomato, avocado, and sliced green onion. Season as desired.
