  1. Preheat oven to 450°.
  2. Pierce the potato on several sides with a fork and place on a foil-lined or parchment paper lined baking sheet or on the center of a wire rack.
  3. Bake potato for twenty-five minutes.
  4. Remove potato and brush with melted butter, sprinkle with salt, and place back in the oven for an additional twenty minutes.
  5. During the “second round” of baking, brown the ground turkey on a non-stick skillet over medium heat until brown all over.
  6. When done, remove the potato from the oven, slice the top open lengthwise with a paring knife, give it a good squeeze to open it up, and fluff the insides with a fork.
  7. Top with ground turkey, diced tomato, avocado, and sliced green onion. Season as desired.
