Directions

  1. Dice the green pepper and onion, and mince the garlic. Toss with olive oil, salt, and pepper. Spread on a parchment-lined baking sheet and broil on high for 10 minutes until blackened.
  2. Remove seeds from the dried ancho chili and cut into pieces. Toast with oregano, cumin, and chipotle chili powder in a dry saucepan over medium heat for 3 minutes. Add diced tomatoes, water, and apple cider vinegar, then simmer for 10 minutes.
  3. Blend the tomato sauce until roughly puréed. Add broiled vegetables and pulse until combined.
  4. Thinly slice the red cabbage and radishes. Chop cilantro, cut limes into wedges, and peel and dice the avocado.
  5. In a skillet, melt butter and cook eggs until whites are set. Repeat for remaining eggs.
  6. To serve, place a warmed tortilla on a plate. Top with an egg, tomato sauce, cabbage, radishes, cilantro, avocado, and cheese. Serve with lime wedges to squeeze over top.
