Ingredients

Directions

  1. Preheat over to 400 F
  2. Mix crushed nuts, coconut and garlic powder (add salt and pepper to taste) in a shallow dish or large bowl for dipping chicken strips
  3. Place whisked eggs in another shallow dish or bowl for dipping
  4. Dip each chicken strip into the egg mix, then dip into nut mixture. Place on greased rimmed baking tray
  5. Place bell peppers and onion on separate baking sheet - drizzle with olive oil and season with salt and pepper to taste
  6. Place both trays in over and bake approximately 20 minutes -(fully cooked chicken internal temperature 165 F)
