- you will need an oven proof dish about 24x20x5cm have quinoa ready to serve with dish or use microwavable pouches pre heat oven to 200o, fan 180o gas mark 6
- spray a saucepan with low cal cooking spray over a medium high heat add onion to brown about 5 to 6 mins then add tinned tomatoes garlic granules and 200ml stock. Bring to the boil. reduce heat and simmer for 15 minutes while the sauce is simmering spray a frying pan with low cal spray and place over a medium high heat. add the chicken breasts and seal for around 2 mins each side, until golden, then arrange them in the ovenproof dish. After the sauce has been simmering for 15 minutes stir in the chopped basil and black pepper to taste. Spoon the sauce over the chicken breasts. Tear the mozzarella into pieces and scatter over the top. Bake in oven for 25 minutes until chicken is cooked and cheese is melted and golden . remove from oven and scatter some basil over the top serve with quinoa
