  1. Drain the tofu, cut in half lengthwise, and then cut each half into half-inch thick squares. Press out excess moisture by placing the tofu on a paper towel-lined cutting board, covering with more paper towels, and weighing it down with a heavy object.
  2. Mix soy sauce and minced ginger in a bowl. Add tofu, cover, and refrigerate for several hours or overnight.
  3. Preheat the oven to 350°F. Cook rice according to package instructions.
  4. Remove tofu from marinade and place on a baking sheet, reserving the marinade.
  5. Bake the tofu for about 8 minutes or until heated through. Drizzle with reserved marinade.
  6. Toast sesame seeds in a dry skillet over medium heat, stirring constantly until lightly toasted, about 3 minutes. Remove from pan immediately.
  7. Serve rice in bowls, top with baked tofu, drizzle with honey, and sprinkle with toasted sesame seeds.
