- Heat olive oil in large skillet over medium high heat. Add onion and diced/seeded jalapeño, cook until softened (about 3 minutes). Add garlic and cook until fragrant (about 1 minute).
- Add black beans (drained and rinsed), tomatoes, corn, quinoa, chicken broth, 2 tsp chili powder, cayenne, cumin, and lime juice. Season to taste with salt and pepper and stir.
- Bring to low simmer and reduce heat to medium low. Simmer for 20 minutes with the lid on, stirring occasionally.
- Season chicken on both sides with remaining 1 tsp chili powder, garlic powder, and oregano. Cook on hot grill or bake at 350 degrees in oven until internal temperature reaches 165 F. Cut into slices and add to Mexican quinoa.
- Serve with diced avocado and fresh parsley.
