  1. Trim sirloin if fat and thinly slice against the grain. Cut scallions in 1 inch pieces (white and greens separated). Mince ginger.
  2. Whisk together cornstarch, 2 tsp soy sauce, rice wine, and 1 tsp sesame oil. Season steak with salt and add to marinade. Turn to coat. Let sit 30 min
  3. Bring pot of water to boil. Add broccoli and cook 1 min. Drain and run under cold water
  4. Heat skillet over high. Add 1 tsp oil and half of beef. Cook 30 seconds without disturbing. Flip. Cook another 30 seconds, moving meat around until browned on all sides. Transfer to plate and repeat with 1 tsp oil and remaining beef
  5. Heat 1 tsp sesame oil in the skillet and add scallion whites, garlic, and ginger. Cook 30 seconds.
  6. Add broccoli, brown sugar, 3 tbsp soy sauce and oyster sauce. Cook stirring 30 seconds. Remove from heat and stir in scallion greens
