Directions
- Peel and chop the sweet potatoes into ½-inch cubes. Steam them over boiling water for 15-20 minutes until very tender. Set aside.
- Rinse the lentils and place them in a pot with enough water to cover by a few inches. Bring to a boil, then reduce to a simmer. Cook for 25 minutes until tender but firm. Drain.
- In a large bowl, combine the steamed sweet potatoes, cooked lentils, and chopped scallions.
