Nandos chicken on rice

Ingredients

• White rice

  Long-grain, regular, raw, enriched

  60g

• Pam cooking spray

  Oil, original

  1 spray , about 1/3 second or 0.3g

• Mushrooms

  White, raw

  2 large or 46g

• Onions

  Raw

  ¼ medium or 28g

• Cucumber

  With peel, raw

  ¼ cucumber or 75g

• Soy sauce

  Regular sodium, Shoyu

  1 tsp or 5g

• Nandos Sauce (perinaise)

  Nandos peri peri

  12g

• Smoked Paprika

  Fresh & Easy

  ¼ tsp or 8g

• Cumin

  Spices, cumin seed

  ¼ tsp, ground or 0.8g

• Lemons

  Raw, with peel

  1 slice (1/8 of fruit) or 14g

• Chicken breast

  Broilers or fryers, meat only, raw

Directions

1. Coat chicken with paprika, cumin and lemon juice. Cook chicken in a air fryer or on a lightly sprayed pan till cooked / no longer pink. Cook vegetables with paprika, salt and pepper till softened.
2. Microwave rice and place in a bowl, mix in soy sauce and rice together. Top with vegetables, chicken, cucumber, sauce. Enjoy!
