  1. Combine flaxseed, walnuts, almond flour, cinnamon, salt, and stevia in a blender or food processor. Process until the nuts are finely ground and the mixture is sandy.
  2. Whisk eggs with half of the soymilk in a large bowl. Stir in the ground nut-flax mixture until evenly combined. Cover and refrigerate for at least 1 hour or up to overnight.
  3. When ready to cook, whisk in the baking powder and the remaining soymilk until just combined, being care not to overmix.
  4. Preheat your waffle iron to high. Lightly grease with cooking spray, then cook the batter until the waffles are set and light brown. Repeat with remaining batter.
  5. Alternatively, if no waffle iron is available, lightly grease a hot nonstick skillet over medium heat. Drop heaping tablespoons of batter, cook 2–3 minutes until browned underneath, flip, and cook until set. Repeat with remaining batter.
  6. Serve warm with Greek yogurt, blueberries, and raspberries.
