Directions
- Combine flaxseed, walnuts, almond flour, cinnamon, salt, and stevia in a blender or food processor. Process until the nuts are finely ground and the mixture is sandy.
- Whisk eggs with half of the soymilk in a large bowl. Stir in the ground nut-flax mixture until evenly combined. Cover and refrigerate for at least 1 hour or up to overnight.
- When ready to cook, whisk in the baking powder and the remaining soymilk until just combined, being care not to overmix.
