  1. Use a large, deep skillet with a lid and heat olive oil over medium-high heat.
  2. Season the pork chops with half of the Old Bay seasoning and sear for 2-3 minutes per side until golden, then remove from skillet.
  3. Add chopped onion and bell pepper to the skillet and cook for about one minute.
  4. Add undrained tomatoes with green chilies, black-eyed peas, broth, rice, Worcestershire sauce, and remaining Old Bay. Place pork chops on top.
  5. Bring to a simmer, cover, and reduce heat to low. Simmer for 25 minutes until liquid is absorbed and rice is tender.
