Directions

  1. Warm the olive oil in a large heavy pot or Dutch oven over medium heat. Add the minced garlic and chopped onion; cook, stirring often, until the onion is translucent, about 2–3 minutes.
  2. Add the chopped mushrooms, Worcestershire sauce, and thyme. Cook, stirring occasionally, until the mushrooms release their moisture and begin to brown, about 5–6 minutes. Season lightly with salt and pepper.
  3. Stir in the brown rice and vegetable broth. Bring to a boil, then cover, reduce the heat to low, and simmer gently until the rice is tender and the liquid is absorbed, 40–45 minutes. Stir in the butter until melted and glossy.
  4. Fluff the rice, taste and adjust seasoning, and serve hot topped with chopped chives.
