  1. Chop the chicken breast into bite-sized pieces. Heat 1 tablespoon of coconut oil in a frying pan over medium heat. Cook the chicken for about 5 minutes or until done. Remove from the pan and set aside.
  2. Slice the bell peppers, removing seeds, and place them in the frying pan with 1/2 tablespoon of coconut oil. Cook for a few minutes until they begin to soften.
  3. Once the bell peppers have softened, add the cooked chicken, soy sauce, chili powder, salt, and pepper. Mix well and stir-fry for a few more minutes. Serve hot.
