Directions

  1. Preheat oven to 400 degrees F. Combine the carrots and zucchini in a large bowl and sprinkle with salt. Allow to sit for about 10 minutes and drain well. Toss with the eggs and spread in a small casserole dish. Bake for 30-35 minutes until eggs are cooked. Remove from oven and sprinkle with the cooked bacon. Serve.
