  1. Preheat the oven to 400°F.
  2. In a small bowl, combine the garlic powder, paprika, onion powder, mustard, brown sugar, salt, and pepper to make a rub.
  3. Heat a large oven-safe skillet over medium-high until hot. Add the olive oil and heat until shimmering.
  4. Pat the pork chops dry and coat them all over with the seasoning rub (you may not need all of it). Sear in the hot oil for about 2 minutes, until well browned on the first side.
  5. Flip the chops, transfer the skillet to the oven, and bake 6–8 minutes, until the center is just cooked through (145°F if using a thermometer).
  6. Let rest 3 minutes before serving to keep the juices in.
