  1. Finely chop the pistachios, basil, and mint. In a small bowl, combine them with half of the olive oil, lemon juice, salt, and pepper.
  2. Pat the salmon dry with a paper towel and season lightly with salt.
  3. Heat the remaining oil in a large cast-iron or stainless steel skillet over medium-high heat.
  4. Place the salmon fillets skin-side down in the skillet. Cook without moving them until the color changes three-quarters of the way up, about 5-6 minutes. Flip carefully and cook for another 2-3 minutes until just cooked through.
  5. Remove the salmon and let it rest on a paper towel-lined plate for 2-3 minutes. Top each fillet with the pistachio-herb mixture and serve.
