Directions

  1. Cook rice to package directions. Slice the tofu into thin slices. In a large skillet, pan fry on medium heat until brown on all sides. Add all of the curry paste and Peanut Butter, stir to coat the tofu. Add coconut milk and cook until it starts simmering. Simmer for a couple minutes and stir until well combined. Add Sugar, and Fish Sauce; stir until combined. Turn off heat. Add the whole fresh basil leaves (no stems), mix well. Let stand until the basil is dark/softened/cooked. Serve over rice.
