Directions
- Chop the anchovy and dill. Thinly slice the onions.
- Heat 1/4 cup olive oil in a 12-inch heavy skillet over medium heat until shimmering. Add bread crumbs and stir constantly until deep golden and crisp, about 6 to 8 minutes.
- Transfer bread crumbs to a bowl and toss with dill, 1/4 teaspoon salt, and black pepper.
- Wipe out the skillet, then cook onions with 1/4 teaspoon salt in the remaining 1/2 cup olive oil over medium heat, stirring frequently, until very soft, about 12 to 15 minutes. Add anchovies and cook, mashing them into the onions until dissolved.
