  1. Set the oven to Broil (High) and position a rack about 6 inches from the element. Line a rimmed sheet pan with foil for easier cleanup.
  2. Pat the pork dry, rub with half of the olive oil, and season generously with salt and pepper.
  3. Broil the pork on the prepared sheet pan for about 15 minutes, turning halfway, until well browned.
  4. Meanwhile, quarter the apples, cut the sweet potatoes into wedges, and slice the onion. Toss with the remaining olive oil, paprika, cumin, chili powder, and a pinch of salt and pepper.
  5. Switch the oven to 450°F (Bake). Carefully remove the pan, arrange the seasoned apples, sweet potatoes, and onions around the pork, and return to the oven.
  6. Roast 20–30 minutes, until the vegetables are tender and the pork reaches an internal temperature of 145°F. Transfer the pork to a cutting board and rest at least 10 minutes.
  7. Slice the pork and serve with the roasted sweet potatoes, apples, and onions, spooning any pan juices over the top.
