- Microwave the frozen spinach in a microwave-safe bowl for about 4 minutes to defrost.
- Transfer the defrosted spinach to a colander and press out all the liquid. Be cautious as it may be hot.
- Heat 1 tablespoon of olive oil over medium heat in a large skillet.
- Add the chopped onions, reconstituted mushrooms, and salt and pepper to taste. Sauté until the liquid has evaporated and the onions have softened.
- In a blender or using a hand blender, blend together the coconut milk, celery, and cilantro.
- Place the ground pork in a large bowl and add the spinach, the puree, mushrooms and onions, eggs, coconut flour (start with 1/8 of a cup), fish sauce, salt, and pepper. Gently combine all the ingredients.
- Form the mixture into small patties, about 2 inches in diameter.
