  1. In a mini food processor, chop the onions, garlic, red bell pepper, and cilantro. Heat the olive oil in a medium saucepan over medium heat and sauté the chopped ingredients until soft, about 2 minutes.
  2. Add the kidney beans with their liquid to the saucepan along with water. Stir in the tomato sauce, chopped potato, sazon seasoning, bay leaf, oregano, salt, and a dash of black pepper. Bring to a boil, then cover and simmer on low heat for about 20 minutes, or until the potatoes are soft.
  3. Discard the bay leaf and serve the beans over rice.
