  1. Pulse the cauliflower in a food processor until it resembles rice, about 2-3 minutes. Set aside.
  2. In a small bowl, whisk together the soy sauce, sesame oil, ginger, and white pepper. Set aside.
  3. Heat half of the vegetable oil in a medium skillet over low heat. Add the eggs and cook until set, about 2-3 minutes per side, flipping once. Let cool, then dice into small pieces. Set aside.
  4. In a large skillet or wok, heat the remaining vegetable oil over medium-high heat. Add the garlic and onion, cooking until the onion is translucent, about 3-4 minutes.
