Directions

  1. Heat two-thirds of the canola oil in a large skillet over high heat. Add the shrimp and cook for 1 minute on each side, then remove from the pan.
  2. Add the remaining canola oil to the skillet with the chopped onion. Cook over medium heat for 5 minutes, stirring occasionally.
  3. Stir in the ginger, cumin, coriander, turmeric, paprika, curry powder, chili powder, salt, and garlic. Cook for 30 seconds.
  4. Add the tomato sauce and mix well.
  5. Pour in the coconut milk and return the shrimp to the pan. Stir well to combine.
  6. Serve garnished with fresh chopped cilantro and chili peppers.
