  1. Heat the oven to 425°F and position a rack in the center.
  2. Using a small sharp knife, score an X on the rounded side of each chestnut to the shell and just into the flesh.
  3. Arrange the chestnuts cut side up on a shallow baking pan and roast until the shells curl back and the nuts feel tender when squeezed, about 20 to 30 minutes.
  4. Wrap the hot chestnuts in a clean kitchen towel and gently squeeze to loosen the shells. Let rest, wrapped, for 5 minutes, then peel and serve while warm.
  5. Serve with peeled, segmented clementines on the side.
