  1. Heat one-third of the olive oil in a 12-inch nonstick skillet over medium heat until hot.
  2. Pat the salmon fillets dry, sprinkle with two-thirds of the salt and pepper, then cook skin side up until the undersides form a golden crust, about 12 to 15 minutes. Turn the fish over and cook until just cooked through, about 3 minutes more.
  3. Meanwhile, heat the remaining olive oil in a large skillet over medium-high heat until it shimmers. Cut the onions into small wedges, then sauté until golden brown and crisp-tender, about 6 to 8 minutes.
