Ingredients
Corn tortillas 4 tortilla or 96g
Cheddar cheese 14 oz or 397g
Directions
- Heat a medium-sized skillet over medium heat. Add sausage; saute until lightly browned and cooked through, about 4 to 5 minutes. Add green onions; saute a few minutes more until just tender. Scrape sausage and onions to side of skillet.
- Meanwhile, whisk eggs in a small bowl. Add to open space in skillet; cook, stirring occasionally, 2-3 minutes, or until eggs are cooked as desired. Stir all ingredients together until well combined. Remove from heat.
- Moisten tortillas; heat 30 seconds in microwave, or in a skillet over medium heat. Divide sausage and egg mixture, spoon equally onto each tortilla, add 1 Tbsp salsa to each; fold and/or roll to enclose. Serve immediately.
