Directions
- Preheat oven to 450°F.
- Wash potatoes and Brussels sprouts. Cut potatoes into 1/2 inch chunks and halve Brussels sprouts.
- On a baking sheet, toss the potatoes and Brussels sprouts with half of the first portion of olive oil. Season with salt and pepper to taste and roast for 15 minutes until tender.
- To make salmon sauce, whisk together the honey, Dijon mustard, garlic, chili powder, cayenne, and remaining olive oil. Season with salt to taste.
- Cut the salmon into fillets for each serving if needed. Place on a plate and spoon the sauce evenly over top.
- Remove the vegetables from the oven and add the salmon to the baking sheet. Add the butter to each filet. Bake for 10 minutes, or until the salmon reaches your desired doneness. During the last minute, switch the oven to broil and broil until lightly charred, watching closely.
- Combine remaining olive oil for dressing, lemon juice, Dijon mustard, Worcestershire sauce, and parmesan cheese in a blender and blend until smooth. Add water to thin the dressing, adding more if needed. Taste and adjust the salt as needed.
- Remove pan from oven and pour dressing over vegetables. Serve immediately and enjoy!
